• Cueva Siete

  In Mayan mythology, there were seven caves, known as Tulan Zuyua, from which all people were birthed. The Yucatan is peppered with caves and archaeologists have long been finding clues of the ancient rituals that transpired within. Cueva Siete brings a touch of that mysticism to our Mexican offering, channeling the history of the region into a persona of mystery and enigma.
   
  Named for the seven origin caves of Mayan mythos, Cueva Siete – or Cave Seven – derives its inspiration from all that is Yucatecan. This regionally focused concept aims to harness the mysticism and reverence of Mayan culture, serving dishes deeply rooted in Mexican flavors and traditions.
   
  Cueva Siete is unique as a strong, chef-driven concept where a new chef will be rotated in every so often. First to take the reins is former Top Chef Mexico contestant, Christian Bravo with a distinguished take on both familiar, and lesser-known, Mexican dishes – a celebration of Mexico’s culinary diversity and ingredients, past, present and future. By day, the restaurant feels casual, celebrating Mexican street food: by the evening it is decidedly more refined.

• Mi Carisa

  A popular woman’s name throughout most of Europe, Carisa has many translations: in Spanish it means “very dear”; in Latin, “artful woman”; and in French, simply “caress.” As a name for our restaurant, Mi Carisa is the beginning of a story, creating lots of opportunities to build a rich narrative around the design concept. It immediately hints at a sense of personality, one defined by passion and mystique. Mi Carisa suggests a space where one would surely go to be alone with their secret love.
  
  Mi Carisa is a love letter to the romantic coastlines and flavors of the Mediterranean, UNICO 20˚87˚’s most elevated dining experience, Mi Carisa focuses on the traditions and practices of coastal Italian cuisine, serving seafood-centric fare in a warm and intimate setting. That culinary heritage is most deeply honored in the form of a beautiful wood-burning oven, imparting a wonderful smoky flavor to everything that passes through it.

• Mura House

  In Japanese, mura translates to “village,” making this restaurant’s name “Village House.” The name embodies the feeling of a gathering place, a sophisticated destination in the “village” that is the hotel campus.
  
  Mura House is a forward-thinking Japanese-inspired restaurant with a surprising attention to detail. While Mura House draws flavors and techniques from throughout Asia, with a concentration on Japan, its cuisine is guided by three principles: the harmony of flavor, precision through preparation, and quality of ingredients. It looks to traditional techniques, preparation and flavors, while utilizing the freshest local seafood and ingredients. 
  
  The restaurant aims to achieve a balance between tradition and uniqueness by bringing together three different styles of Japanese cuisine-teppanyaki, yakitori and sushi.

• 20°87° Restaurant

  Incorporating the hotel’s coordinates into its name, 20°87° Restaurant – the hotel’s casual beachside venue – aims to capture the heart and soul of the UNICO 20˚87˚ experience, while subtly hinting towards notions of navigation and coastal exploration. 
  
  The dining experience is fitting with a concept that shifts throughout the day: from a bountifully diverse morning buffet – think fresh juices, eggs to order and house-baked Mexican pastries – to a classic grill in the evenings, serving up choice cuts of steak and fish. 
  
  20°87° Restaurant is a spot to have a meal, relax with a drink, or nibble on snacks while taking in the picturesque ocean vista. In short, it is a focal, beachside hangout with a little bit for everyone.

• Café Inez

  Inez and Hortencia are a fictional dynamic duo; two wise and eccentric herbalists that have set up shop right in the center of the UNICO 20˚87˚ lobby. These charmingly folksy characters bring a sense of familiarity and homey comfort to the lobby experience while also connecting to the space’s apothecary design inspiration.  
  
  Café Inez is UNICO 20˚87˚’s own take on European café culture: an important social gathering setting, often a stopping off point in between activities. A way to refuel, rejuvenate and recharge. 
  
  Fresh juices, coffee, tea and baked goods are served in the morning while the menu transitions to sandwiches, paninis and meal-sized salads for lunch and dinner. It’s a seamless experience where guests can eat in or take out, day in and day out. For a quick snack on the go, a light meal over the morning’s paper or even midnight munchies, Café Inez is the go to.

• Palmera Lounge

  When Prohibition took hold, the thirsty took off. Many of the best bartenders left for Cuba and its lure of luxury, triggering a Cuban cocktail renaissance. There was glamour, plenty of local rum, and world-class cigars. Palmera Lounge picks up where this intoxicating storyline leaves off – a new take on the classic, high energy Cuban clubs of the 40s with expertly crafted cocktails, bright, inviting design boisterous live entertainment and a cigar bar. 
  
  Calling back to tropical nightclubs of the 40s and 50s, Palmera Lounge celebrates their decadent spirit with a mix of nostalgia and sophistication. Embracing one of the most iconic images of that time, the palm tree, this name immediately evokes breezy Caribbean nights and lively cocktail soirées. 
  
  Every Tuesday at 9pm, guests are invited to experience Pachanga - an interactive show with the best in Latin music and dance.

• Bar Balam

  Bar Balam is UNICO 20˚87˚’s day through night cocktail bar, radiating warmth, while calling to mind the mystique of hidden-door cocktail dens of yore. 
  
  Balam (which translates to jaguar in Mayan) is a powerful spirit in the ancient Mayan tradition – a divine symbol of strength and a protector of fields. This sense of strength and boldness infuses the drinks which present an insightful Mexican take on a classic cocktail tradition. We see Balam as a source of mystical energy for our superstitious herbalista Inez, a spirit animal if you will.
